Alex's Vegan Chorizo Tacos


This is a super easy go to meal when you don't have a ton of time.

Been making this dish for yoga retreats for awhile now, and everyone falls is love with this simple dish, even the meat lovers.

If you are making this for someone who lives and dies by bacon and burgers, don't tell them what it is til after they are done.

Trust the process.

Once you realize how easy it is to make, the truth about my cooking skills will be exposed and you will soon discover

that cooking is not as hard as you thought it was.

Super filling and ridiculously tasty. After all, if it wasn't epic, why would I make it in the first place?

 This recipe will serve 2 hungry people.

If you are a nibbler, then you got leftovers for tomorrow. Win win.

 Here's what you need to make things happen

1 pack of fresh FIRM tofu ( not the silken kind that is room temperature.) 

1 red onion finely chopped

1 tbsp minced garlic

1 tbsp chili powder

1 tsp salt

1/2 tsp pepper

half a roll of cilantro

one lime

Corn or flour tortillas ( don't be lazy, heat 'em up)

 First drain the tofu and throw it all in a nut milk bag, and squeeze as much water out as possible. 

Don't have a nut milk bag? Order this 


in the meantime grab two cutting boards and place a dish towel on the top of the cutting board. Place tofu on top of towel, and place another dish towel on top of tofu. Drop second cutting board on top and press down to pull all the moisture out. 

Take tofu in your hands and crumble it all into a bowl. 

Set aside


Grab a pan and turn burner to medium heat.

drop some olive oil in 

throw the garlic and onion in and stir around for a few minutes.

Add the salt and pepper

stir it all around for a minute or so.

Add the tofu and mix well.

Add the chili powder and mix until evenly spread.

Continue to mix for about 2 minutes

Turn heat off and squeeze the lime into pan and mix all around

then throw the cilantro in there and mix again.


Throw it on your tortillas and garnish with greens, guac, beans, or whatever else you got lying around

On the picture I added red cabbage slaw

shred up some red cabbage

finely chop a carrot into long thing matchsticks

chop the other half of that cilantro roll

mix in a bowl

with lime, olive oil, rive vinegar and salt
